These no-bake s'mores protein bites are the after-school snack that actually delivers. Their nutty, chocolatey, freezer-friendly, and ready in 10 minutes.

Ingredients
1cupMedjool datespitted
1cupraw cashews
4sheets graham crackers
¼teaspoonfine sea salt
5tablespoonscoconut oilmelted
½cupmini marshmallows
½cupmini chocolate chips
½teaspoonground cinnamon
2scoops collagen or protein powder
Instructions
Add dates, cashews, and graham crackers to a food processor or blender and pulse or blend until fine crumbs form, about 20 pulses.
To the nut mixture, add salt, coconut oil, collagen powder, and cinnamon. Pulse several more times until completely combined and “dough” begins to stick together.
Add marshmallows and chocolate chips to the processor and pulse a few times to incorporate chips and marshmallows. If using a blender, add mixture from the blender to a large bowl. Using your clean hands, mix in the marshmallows and chocolate chips evenly incorporated.
Form into balls and place on a parchment lined sheet pan. I use a 2 tablespoon cookie scoop to portion out my dough, roll in my hands, and create uniform balls.
Chill in the fridge for 1 - 2 hours until firm. Store in an airtight container in the fridge for up to a week or in the freezer for up to 3 months.
Notes
For a gluten free option, I’ve substituted Schar GF graham crackers for the regular graham crackers and doubled the cinnamon.
