There’s a moment when we gathering, whether for a casual night with friends or a game day party with neighbors, when the room decides where to land. Give them a reason to land in the kitchen. This warm, bubbling Roasted Corn and Garlic Jalapeño Popper Dip does that better than any centerpiece I’ve ever set out.
Jump to RecipeThis is the one I make when I want people to feel at home the second they arrive. It has everything you love about a jalapeño poppers (the cream cheese, the heat, the bacon), but it’s scoopable, shareable, and almost entirely made ahead. Sweet roasted corn and soft, mellow roasted garlic fold into a creamy, cheesy base with fresh jalapeño, and crispy bacon goes right on top.
Fall Is For Laid Back Gathering
Fall fills up fast with game days, potlucks, and Friday nights where the plan is just “come over whenever.” I’d rather spend those nights with my people than standing at the stove, and this dip lets me do exactly that. Assemble it the day before, slide it into the oven when the doorbell rings, and let it be the thing everyone hovers around.
Speaking of potlucks, try my Crispy Potato Parfaits: A Savory Spin on the Viral Dot Cake an almost completely make ahead dish. Why You’ll Love It
- One sheet pan does the heavy lifting. The corn, bacon, and garlic all roast together, so there’s no stovetop juggling.
- Roasting makes it special. The corn caramelizes at the edges and the garlic turns sweet and spreadable. That’s the difference between a good dip and the one people ask you to bring again.
- It’s made for hosting. Assemble it the day before, then bake it as guests arrive. You get to answer the door instead of hovering at the stove.
- Crowd-friendly heat. Seeded jalapeños bring all the flavor with a gentle kick, so it works for spice lovers and the cautious alike. My eldest loved this dip and she’s a spice avoider.
A Few Notes on Ingredients
- Corn: Fresh or frozen both work beautifully. If you’re using frozen, thaw it and pat it dry so it roasts and browns instead of steaming.
- Thick-cut bacon: It holds up in the oven and gives you meaty, crispy crumbles for the top. It keeps crisping as it cools, so don’t worry if it looks a little soft coming off the pan.
- Garlic: A whole head sounds like a lot, but roasting mellows it into something sweet and buttery. Trust me on this one.
- Cream cheese: Room temperature is the key to a smooth, lump-free base. Set the block on the counter when you start roasting and it’ll be ready when you are.
- Cheese: Shredding your own cheddar and pepper jack gives you the meltiest, creamiest result. Bagged shreds work too; this is a do-it-your-way kind of dip.
- Jalapeños: Most of the heat lives in the seeds and white ribs. Remove them for a mild dip, or leave a few in if your crowd likes it hot. Slice an extra one if you’d like fresh jalapeño rings on top for serving.

How to Make It
Roast everything on one pan. Toss the corn with olive oil, salt, and pepper and spread it over two-thirds of a parchment-lined sheet pan. Lay the bacon on the remaining third. Trim the top off the garlic, drizzle it with oil, wrap it in foil, and tuck it onto the pan. After 20 minutes, pull the bacon to cool, give the corn a toss, and let the corn and garlic keep going until golden and soft.
Mix the base. Squeeze the roasted garlic right out of its skin into a bowl. It’s one of the most satisfying kitchen moments there is. Beat it together with the cream cheese and seasonings, then fold in the cheeses, jalapeño, and roasted corn.
Top and bake. Spread it into a baking dish, sprinkle on the reserved pepper jack and crumbled bacon, and bake until golden and bubbling. Finish with green onions and serve it hot, right where people are gathering.

Make-Ahead and Serving Tips
- Make it the day before. Assemble the dip up to the point of baking, cover it, and refrigerate. Let it sit on the counter while the oven heats, then bake as directed. If it’s still cold in the center, give it a few extra minutes.
- Save the green onions for last. Add them right before serving so they stay bright and fresh.
- Set out a mix of dippers. Tortilla chips are the classic, but sturdy crackers, celery, and mini sweet peppers make the spread feel generous.
- Doubling for a crowd? Bake it in a 9×13 dish and add a few minutes to the bake time.
- Leftovers: Cover and refrigerate for up to 3 days, then rewarm in the oven until bubbly.

Pull Up a Chair
The best gatherings aren’t the ones where everything is perfect. They’re the ones where someone set out something warm and said, “Come on in.” This dip is my favorite way to say exactly that. So make it the night before, let the kitchen get a little crowded, and don’t even fret about your floors being spotless.

Roasted Corn and Garlic Jalapeño Popper Dip
Ingredients
- 2 cups fresh or frozen and thawed corn kernels
- 4 strips thick cut bacon
- 1 whole head garlic
- 2 tablespoons olive oil divided
- Kosher salt and freshly cracked pepper for seasoning corn
- 1 8 oz. block of cream cheese room temperature
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1 teaspoon smoked paprika
- ½ teaspoon freshly cracked pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese divided
- ½ cup diced jalapeño about 2 large, seeded jalapeños
- 2 green onions trimmed and thinly sliced, for garnish
- Tortilla chips, crackers, or veggies for serving
Instructions
Roast corn, bacon, and garlic:
- Preheat the oven to 400º and line a sheet pan with parchment paper. Toss corn with 1 ½ tablespoons olive oil, generous sprinkle of kosher salt and freshly cracked black pepper, and spread in a single layer over ⅔ of the sheet pan. Layer the bacon across the remaining ⅓ of the sheet pan. Cut off ⅓ of the top of the garlic bulb, drizzle with remaining ½ tablespoon olive oil and a sprinkle of kosher salt, wrap in foil, and place on the sheet pan with the corn and bacon. Roast everything for 20 minutes until bacon is browned (or desired crispiness), transfer bacon to a paper towel lined plate to cool (will continue to crisp as it cools). Toss corn and continue to roast corn and garlic for another 10 to 15 minutes until corn is golden brown and garlic is soft when squeezed slightly. Set aside to cool. Reduce oven to 375º
- To a medium bowl, squeeze garlic bulb from the uncut end pushing upward until the roasted garlic oozes from the bulb into the bowl, add cream cheese, onion powder, salt, paprika, and pepper and mix using a hand mixer or wooden spoon. Fold in cheddar cheese, pepper jack cheese (reserving ¼ cup for topping), jalapeño, and corn until combined.
- Spread dip into a square or oval baking dish, top with reserved pepper jack cheese, and cooled bacon that has been crumbled. Bake at 375º for 15 to 20 minutes until golden and bubbly. Top with sliced green onions and jalapeños and serve immediately with tortilla chips, crackers, or even veggies.
