There’s a very specific kind of hungry that walks through the door at 3:15pm. Backpack still on. Shoes half off. “Is there food?” “hi” feels like an illusive dream.

I remember those after school days and what felt like a fire drill, leaving me scrambling for something of substance beyond a bar. Better options were needed… especially the kind that can be made ahead and tame the hangries. One good snack, made once, ready all week.

Enter: s’mores protein bites. Nutty, a little coconutty, laced with chocolate and marshmallow… Basically Girl Scout Samoa energy with a protein boost. They live in your freezer, they take ten minutes to throw together, and they make the after-school scramble feel like something you actually planned for. (Even if you didn’t.)

  • No baking, no fuss. Everything happens in a food processor.
  • Freezer staple. Make a batch on Sunday, double it for your future self, snack all week, or all month.
  • Genuinely craveable. These don’t taste like “the healthy ones.” They taste like dessert.
  • On the go. Lunch boxes, gym bags, sideline snacks… packed straight from the freezer and they hold up anywhere.
  • Real ingredients. Dates, cashews, coconut oil, a little protein powder… nothing you can’t pronounce. These taste like a treat but they’re built from whole-food staples, so I don’t think twice about the kids grabbing a handful (or grabbing one myself).

A Few Notes from My Kitchen

Gluten-free? I’ve swapped in Schar gluten-free graham crackers and doubled the cinnamon, or Simple Mills Honey Cinnamon Thins which work beautifully.

Getting uniform balls: A 2-tablespoon cookie scoop is the move here. Portion, roll between your palms, done. It’s the difference between “homemade treat” and “science fair project.” I use this cookie scoop for protein bites, my Brown Butter Toffee Chocolate Chip Cookies, ice cream, filling muffin tins, and these Strawberries and Cream Parfaits.

Storage: I use these airtight container in the fridge for up to a week, or the freezer for up to three months. I keep a batch in the freezer at all times… future you will be grateful.

Not a Protein Powder fan: Same! I use collagen powder instead or add half protein powder, half collagen powder.

S’mores Protein Bites

These no-bake s'mores protein bites are the after-school snack that actually delivers. Their nutty, chocolatey, freezer-friendly, and ready in 10 minutes.

Equipment

  • food processor or blender

Ingredients

  • 1 cup Medjool dates pitted
  • 1 cup raw cashews
  • 4 sheets graham crackers
  • ¼ teaspoon fine sea salt
  • 5 tablespoons coconut oil melted
  • ½ cup mini marshmallows
  • ½ cup mini chocolate chips
  • ½ teaspoon ground cinnamon
  • 2 scoops collagen or protein powder

Instructions

  • Add dates, cashews, and graham crackers to a food processor or blender and pulse or blend until fine crumbs form, about 20 pulses.
  • To the nut mixture, add salt, coconut oil, collagen powder, and cinnamon. Pulse several more times until completely combined and “dough” begins to stick together.
  • Add marshmallows and chocolate chips to the processor and pulse a few times to incorporate chips and marshmallows. If using a blender, add mixture from the blender to a large bowl. Using your clean hands, mix in the marshmallows and chocolate chips evenly incorporated.
  • Form into balls and place on a parchment lined sheet pan. I use a 2 tablespoon cookie scoop to portion out my dough, roll in my hands, and create uniform balls.
  • Chill in the fridge for 1 – 2 hours until firm. Store in an airtight container in the fridge for up to a week or in the freezer for up to 3 months.

Notes

For a gluten free option, I’ve substituted Schar GF graham crackers for the regular graham crackers and doubled the cinnamon.
