Strawberry Vanilla Smash

A refreshing burst of spring strawberries, laced with vanilla and mint, are mingled together in this fun fresh drink. This is perfect drink for gathering with friends or serving at a bridal shower.

Ingredients

Drinks

  • 4 strawberries sliced
  • 10 mint leaves slapped (whack them against your palm to release their aroma)
  • 3 oz coconut water
  • 1 Tbsp lime juice
  • 3-4 Tbsp vanilla honey syrup or simple syrup
  • 1 Tbsp vanilla sugar store-bought or homemade
  • club soda

Vanilla Honey Syrup

  • ¾ cup water
  • cup honey
  • 1 vanilla bean scraped

Instructions

For the vanilla honey syrup

  • Add water and honey to a small pan. Using the tip of a paring knife cut the vanilla bean lengthwise. Use the point or edge of the knife to scrape the seeds loose from the pod by running the knife down the length of the open pod. Add seeds and empty pod to the pan.
  • Cook on a low boil for about a minute, whisking to break up the seeds. Remove from heat and allow to cool completely. Store in a sealed container in the fridge.

For the drinks

  • Use a wedge of lime to line the rim of your glass with the juice. Dip the lined glass rim into a shallow dish of the vanilla sugar, coating the rim with the sugar. Set aside.
  • Add strawberries, mint leaves, coconut water, lime juice, and vanilla syrup to a separate glass. Use a muddler or end of a wooden spoon to gently press strawberries and mint, until they release their juices and are slightly mashed.
  • Add a handful of crushed iced to the rimmed glass. Pour mixture into your sugar rimmed glass and top off with club soda or sparkling water. Garnish with a strawberry slice and mint sprig.
